The list below contains the most important fist fighting weapons, specially those that are loot from bosses.
It means you can still find different weapons somewhere, but it might be not as good as the ones on this list.
Some swords have a defense modifier like juggerscale sword, for example (31 +2).
You can take an depth look into defense modifier here.
Monk weapons have something that is called elemental bond, like hellsteel katar 
for example.
It means that, if the weapon is bond to energy, all damage dealt by user attack spells will deal energy elemental damage.
They can only be wore by monks.
